Gluten Free Peanut Butter Oatmeal Chip Cookies

One of my favorite things to do is "veganize" recipes. Now that we are also trying to eliminate most of the gluten in our food, I am also working on "de-glutening" recipes.

I have always had a love of good peanut butter based desserts. These cookies don't have any flour, just oats. If you really need to ensure these are gluten-free, make sure you buy oats that have not been cross-contaminated. 

This recipe is adapted from The Southern Institute.

1/4 cup earth balance butter
3/4 cup vegan sugar
3/4 cup brown sugar
1 1/4 tsp baking soda
1 tsp vanilla
2 eggs worth egg-replacer
1 cup organic peanut butter
3 cups rolled oats
1 cup vegan carob chips

Preheat oven to 350 degrees.  Beat sugar, brown sugar, and butter substitute in a stand mixer until creamy. 

Add beaten egg replacer, vanilla, and baking soda and mix well.  

Add in peanut butter and mix until well combined.  Stir in the oats and chocolate chips.

Place dough by heaping teaspoons onto cookie sheet.  Bake 10-12 minutes or until lightly golden on edges.

Allow to cool for a few minutes on the cookie sheets before transferring to wire cooling racks to cool completely before devouring.
