Tofu Scramble

Breakfast is the most important and best meal of the day. There is no question about it. Scrambled eggs, french toast, waffles, pancakes! Wow!

This recipe is very simple, tasty, and even healthier than traditional scrambled eggs. It requires slightly more time to prepare, but its worth it. Try it with tempeh bacon or sausage, whatever you prefer. The mock-meat gives some extra flavor and a smokiness that pairs well with the savory tofu. 

The nutritional yeast in the "marinade" for lack of a better word gives the tofu a nice nutty/cheesy flavor while the turmeric provides the yellow color along with flavor.

1 package extra firm or firm tofu, well drained and pressed of water
1 tablespoon water
1 tablespoon olive oil
1 tablespoon nutritional yeast
2 cloves crushed/minced garlic
1/2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/2 teaspoon pepper
2 vegan sausage links cut into 1/2 pieces
1 tablespoon earth balance
salt and pepper for seasoning if needed

While the tofu is draining in paper towels, whisk the water, olive oil, nutritional yeast, garlic, salt, thyme, cumin, turmeric, and pepper in a medium size bowl to form the marinade.

Crumble the tofu into the bowl with the marinade, making some pieces larger than others to mimic the scramble. Mix the tofu and the marinade well until it is combined.

Heat the earth balance in a large frying pan under medium-high heat. When the butter is melted, add the tofu and stir occasionally. The tofu scramble is done when it is lightly browned and warmed all the way through. Remove the tofu from the pan and set aside and add the sausage. Cook for about 5-7 minutes until the sausage is browned. Add in the tofu to the pan and remove from the heat. Mix it up and season with more salt and pepper if you would like.
