Quick Fried Rice
Fried rice is one of my favorite weeknight meals. It is also the consummate "what you have on hand recipe." (You will note a definite lack of peas in the picture below...I didn't have any!)
Most of these ingredients you will have on hand in some variety, but feel free to try different veggies!
2 cups cooked rice
1/2 cup cooked tofu cubed (I love Trader Joe's Organic baked tofu for this and other dished. Check out this list of all their vegan products!)
2-3 cloves of garlic crushed
1 tablespoon grated ginger
1 cup frozen corn
1 cup frozen peas
2 tablespoons neutral oil
2 tablespoons soy sauce (more to taste)
Heat the oil in a medium non-stick skillet. When hot, add the garlic and ginger and sauté for a few minutes taking care not to burn it.
Add in the cooked rice and stir well so that the ginger/garlic oil mixture coats all the rice. Add in the corn, peas, and cooked tofu and stir well. Cook on medium for a few minutes stirring often until the mixture is uniformly hot.
Add in the soy sauce and mix well. Delicious!
