Vegan Rice Crispy Treats

Marshmallows are delicious. Most commercially available marshmallows contain gelatin, which makes them not vegetarian let alone vegan. Luckily, there are a few alternatives available. Our favorite are Dandies Vegan Marshmallows from Chicago Soydairy.  I am tempted to buy a case of these--because they are often so expensive and hard to come by!

In order to make them super awesome, I also use a vegan marshmallow fluff.

3 tablespoons earth balance butter
1 package 10 oz. Dandies Marshmalows
3/4 cup ricemellow creme (Suzanne's Ricemellow Creme)
6 cups puffed rice cereal (sometimes I mix brown and white puffed rice)

Melt the butter in a large saucepan over low heat. Add the marshmallows and ricemellow and mix constantly until they melt into one white ball in the middle of the pan. 

Remove from the heat and add the rice cereal and mix well to coat all of the cereal.

Line a 8 x 8 baking dish with parchment paper and put the cereal/marshmallow mixture in the baking dish. Spread it evenly. Allow to cool, cut and enjoy!
