Oatmeal Raisin Cookies

I recently wanted to make some oatmeal raisin cookies and realized I didn't have a recipe on the blog! So I started researching some gluten free, vegan recipes and ended up adapting this one here. These were chewy, moist and delicious. They have some flax in them so you can even say they are( sort of) healthy!

1 3/4 cup gluten free flour blend (I use Bob's Red Mill)
1 cup vegan (organic) sugar
1/2 cup gluten free oats
1/4 cup ground flax meal
1 teaspoon cinnamon
1 1 /2 teaspoon xanthan gum
1 teaspoon baking soda
1 teaspoon salt
1 cup melted coconut oil
1/2 cup unsweetened applesauce
2 tablespoons vanilla extract
3/4 cup raisins (you can use dried cranberries, dark chocolate chips, etc)

Preheat oven to 325 degrees. Prepare two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, sugar, oats, flax meal, cinnamon, xanthan gum, baking soda and salt.

Add the coconut oil, applesauce and vanilla stirring with a spatula until a dough forms. The xanthan gum and flax will make it quite sticky. Add the raisins and stir until well integrated.

Drop the dough by tablespoons onto the baking sheet and flatten slightly. Bake for 8 minutes, rotate baking sheet and bake for 7 minutes more.

Let cool before serving. Store in an airtight container.
