Vegan Apple Crisp

When having people over for dinner, this makes a really nice and fast dessert that you can make while the dishes are being cleaned at the end of the meal! This recipe is adapted from one I found on BettyCrocker.com. Using a mandolin on the apples gets you a nice thin apple slice that cooks up nice and fast. My version is gluten free, but you can use regular wheat flour as well.

2 large or 4 medium  apples (I used Fiji apples) peeled and sliced
1/2 cup vegan brown sugar
1/2 cup gluten free or wheat flour
1/ 2 cup old-fashioned oats
1/3 cup Earth Balance softened
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Pre-heat the oven to 375 degrees.

Prep a 8 inch square baking dish or a 9 inch glass pie dish with some non stick spray. Slice the apples thinly, or use a mandolin to make think slices. Arrange the sliced apples in the baking dish.

In a small bowl combine the brown sugar, flour, oats, Earth Balance, cinnamon and nutmeg. You might have quicker results using (clean) hands to get the mixture all crumbly.

Spread the topping over the apples and bake for around 30 minutes until the top is nicely browned and the apples are cooked through.

Enjoy with some soy vanilla ice cream on top.
