Tofurkey in the slow cooker

Last year, I found a recipe that did the Tofurkey in the slow cooker. Not only did it come out moist and delicious, it saved precious oven space for the various other dishes I made. This recipe also provides you with a nice side dish and gravy as well, so you can think of it as a one pot thanksgiving option!



  • 1 Tofurkey Roast, defrosted overnight

  • 32oz of Mushroom Gravy ( Imagine Vegetarian Mushroom Gravy is a solid choice)

  • 2 Cups of mixed mushrooms

  • 2 Large Potatoes

  • 2 Large Carrots

  • 1 Large Yellow Onion

  • 4 Tbs Earth Balance Vegan Butter (enough to coat entire roast)


With your hands, coat the entire Tofurkey Roast with the vegan butter & place it in the crock pot. Chop the potatoes, carrots and onion into large chunks and place in the crock pot with the roast. Place the mushrooms on top and pour the mushroom gravy on top.

Let it simmer on the highest setting for 8-10 hours. You can even set it to cook overnight if you start your Tofurkey from frozen. Serve on a platter with the veggies and gravy.
